In the middle ages, baking was considered a luxury.  Those who could afford a wood-burning stove started the day baking bread.  The better the quality of the bread, the higher up the social ladder you were.  The upper classes ate fine, floured wheat bread.  The lower classes were only able to afford ryes and black breads.  Eventually bread was served as a staple food and had a very special role.  A "trencher" was used as a stale piece of bread served as an absorbent plate beneath the food that was eaten.  At the end of the meal the trencher was eaten and what was left over was given to the poor or fed to the dogs.  Legend has it that pizza originated from trencher bread.  Any way you "slice it up," the aroma of bread is a comforting aroma of hearth and home.
